It could be the "Symbol" font which is not found by Ghostscript....

check these items:

* the "FontPath" directive in "/etc/cups/cupsd.conf". Is it set? does the
   directory exist? does it contain fonts?

* you can set more than one FontPath in cupsd.conf by enumerating them
   in multiple "FontPath" lines, or by saying

      "FontPath  /path/to/first:/path/to/second:..."

* check the path where Ghostscript searches for fonts. It is indicated
   by the "gs -h" command at the end. Check if all the paths are there and
   if they contain font files. ("Repair" by creating symlinks to the real
   locations...)
