Yes, since llvm 3.3 you can use plain upstream llvm.
We'd encourage you to use this version as the latest git has some issues.

Regarding the applied kernel patches:
We have a spreadsheet where we keep track of them currently.
Most patches have a comment section inline meanwhile.

You can group the patches in into: 
* kbuild  - changes to make kbuild support clang as compiler
* arch specific fixes
* workarounds
